Here is what I have decided.
I have decided that when I have meals planned out a few weeks in advance, our nights go more smoothly and it’s not a free-for-all at 5:30 pm.
Now, Matt has traveled a little more than usual the last few weeks which does change up the dinner menu and prep. The kids and I eat whatever is easy for me to make quickly on those nights he is away.
He is gone until late Wednesday so this week is a wash. But NEXT week. Next week is ON! And here is what I’ve got planned…
(PS. You all know I like EASY and usually CROCKPOT!)
First, I took a look at what I have in my freezer that I can build some meals off of so at least two of the options below are because I actually already have all of the ‘materials’!
I actually have some turkey sausage in the freezer and we usually always have mushrooms on hand. I need to pick up the pappardelle pasta and some half-n-half and this is a pretty easy meal to put together!
We have made this before and it is SOOO good! It’s beyond easy (keyword!) and goes in the crockpot (ding ding!). I always have to use shredded hash browns to make this potato soup because Chicago doesn’t sell diced hashbrowns (this is no joke, the strangest thing!) BUT…. low and behold, I saw them at Target (and Target NEVER has them) and grabbed three bags because they will never have them ever again!
This is basically a ‘dump it all in, let it sit for hours, stir, serve’ recipe and I 100 percent approve it!
This. I love every single thing in this foil packet. We have made something similar to this but we had to put it out on the grill. Well… when Matt doesn’t get home until 6:30 or later, and mama doesn’t do the grill, these foil packets that can go in the stove are a yes!
Another easy idea that involves the crockpot! I do this pulled pork a lot because it’s beyond simple to do, but tossing it on a sweet potato is something we haven’t tried. Add this to your list friends!
These are something I made for our Super Bowl party for a party of five (meaning it was just the five of us). We did not have crescent rolls (thanks to my grocery pick up that didn’t put in my bag!) so Matt got pizza dough and we made it work. They ended up thicker than they should have been but were still really good. Even the kids loved them! So with the crescent rolls – these are perfect! And great for a breakfast option as well!
